When baking in quantity
When kneading a large amount of flour: a small piece of dough is set aside, the blessing is said and the piece is then burned. The amount that calls for the blessing varies by custom; ask a rabbi.
בָּרוּךְ אַתָּה יְיָ אֱלֹהֵינוּ מֶלֶךְ הָעוֹלָם, אֲשֶׁר קִדְּשָׁנוּ בְּמִצְוֹתָיו, וְצִוָּנוּ לְהַפְרִישׁ חַלָּה מִן הָעִיסָה:
Baruch Ata Adonai, Eloheinu Melech haolam, asher kideshanu bemitzvotav vetzivanu lehafrish challah min ha'isa.
Blessed are You, Adonai, our God, King of the universe, who has sanctified us with His commandments and commanded us to separate challah from the dough.

Harei zo challah.
